Shindo distillery was founded in Fukuoka in 2021 by the company Shinozaki who have around 200 years experience in Sake and Shochu production. This distillery is heavily focussed on yeast and the process of fermentation. Experimental 01 has been produced using a vatting of 91% ex-Bourbon casks, 4% new Mizunara casks, 4% ex-Oloroso casks, and 1% refill ex-Scotch casks. Bottled at 50%ABV.
