Fully matured in a small batch of 1st fill ex-Four Roses Bourbon quarter casks using 100% malted Golden Promise barley. Askeim is lightly peated spirit and these casks were selected and put together by the guys at Aquavitae. Bottled at 55.0%ABV. Few of my tasting notes below.
Nose: buttery shortbread, toasted macadamias, silage, gooseberry compote, apricot and almond pastries, and a rich grist.
Palate: more of that buttery shortbread, jammy persimmon, grapefruit zest, and little saline starting to creep in.
Finish: long finish, with dry peat and saline ramping up with a touch of quinine (tonic water).
